Premium summer flower honey from the Loire 250 g

Where spring honey is light and restrained, the summer harvest is the opposite. The bees then work sunflower, clover, thistle and lime, and that gives a honey with clearly more character and a darker colour.

Flavour and texture
Full and lively, with a rich floral complexity and a fresh undertone that keeps it from turning heavy. Of the six, this is the most pronounced honey. If you find honey too sweet and too uniform, start with this one.

Where it comes from
From the sun drenched, flower rich landscapes of the Loire valley and the Petite Beauce, harvested between June and August. Our honey comes from a family beekeeping business that has existed since 1991 and moves the hives along with the blossom in summer.

How to use it
Strong enough for a sturdy black tea or a chai. Also very good with cheese, blue cheese and mature goat's cheese in particular, and over roasted nuts. In baking it gives more depth than a mild honey, but it also comes through more clearly, so bear that in mind.

Crystallising
This honey turns grainy over time, which is normal and in fact a sign that little has been done to it. Stand the jar in hand warm water of about 40 degrees for half an hour to make it runny again. Not in the microwave.
