Spring honey is the first harvest of the year. The bees take their nectar from whatever flowers first: fruit blossom, willow, dandelion and rapeseed. That gives a honey which tastes lighter and fresher than anything that comes later in the season.
Taste and texture
Mild and freshly floral, with a sweetness that draws back quickly rather than lingering. What makes it special is the texture: this honey is naturally creamy and spreadable rather than runny, because early flowers give relatively a lot of glucose and that crystallises finely and fast. So you do not have to wait until it becomes spreadable, it already is.
Where it comes from
From the forests of the Sologne and the orchards of the Loiret, harvested in April and May. Our honey comes from a family beekeeping business that has been going since 1991 and follows the flowering across France with more than a thousand hives.
How to use it
The creamy texture makes this above all a breakfast honey: on a thick slice of bread, through the yoghurt, or over warm porridge. It dissolves in tea perfectly well too, though that takes a little longer than with a runny honey. Only stir it in once the tea has cooled to about 60 degrees.
Crystallisation
This honey has already crystallised, which is how it should be. If you would rather have it runny, stand the jar in hand warm water of about 40 degrees for half an hour.
