Premium wildflower honey from the Loire 250 g

Wildflower honey is a mixed harvest: the bees choose for themselves from everything flowering within their three kilometre range. That makes it the most complete honey of the six, and at the same time the most changeable, because no two years taste exactly alike.

Taste and texture
Round and fully sweet, with light floral notes and a slightly wild edge. Where acacia honey draws back, this one holds its ground. That makes it the better choice in places where a mild honey disappears.

Where it comes from
From the Sologne and the valleys of the Cher, the Loiret and the Loir-et-Cher. Our honey comes from a family beekeeping business that has been going since 1991 and moves its hives with the flowering in summer between the Val de Loire, the Sologne and the hills of the Sancerrois.

How to use it
This is the honey for robust tea. With a black tea, a chai or a rooibos, acacia honey has too little body, but this one holds up perfectly well. Good through yoghurt too, over cheese, and in the batter for cake or spiced honey cake.

Crystallisation
This honey turns grainy over time. That is not spoilage but a sign that little has been done to it. Stand the jar in hand warm water of about 40 degrees for half an hour to make it runny again.
