Yuzu is a Japanese citrus fruit that sits somewhere between mandarin, lime and grapefruit: fresh and fruity, but softer and more aromatic than lemon. As a syrup it adds a sparkling, slightly unexpected layer to everything you would normally put lemon in.
In lemonade and cocktails
With sparkling water, a clear, lightly floral lemonade. In a gin or vodka cocktail it takes the place of lemon juice and brings more scent with it.
In tea
A splash in a cold green tea or oolong. In Japan and Korea, warm yuzu tea with hot water is a classic in its own right.
Baking
